Also called "Pumpkin Chips" or "Pumpkin Chip Preserves," the pumpkin is thinly sliced into "chips" and preserved in a lemon and ginger syrup. This is a very old fashioned recipe common in the Carolina Lowcountry. To those that have only ever had pumpkin that drowning in spices, it is a revelation. A lovely and delicious topping for cheesecake, yogurt, biscuits, pound cake and more.
Ingredients: pumpkin, sugar, lemons, ginger, vanilla bean, salt.
